Dogs Don't Eat Pizza

I try to make dinner most days of the week, but, by Thursday, both my desire to make dinner and my groceries for the week have dwindled. So, Thursday at our house is the day we have “Breadboard Dinner.”

I first heard of Breadboard Dinner Night on Catherine Newman’s blog, Ben and Birdy. I loved the idea that dinner could be so easy but also so lovely – especially when it’s so hot outside that I don’t want to turn on or even go near an oven.

Basically, Breadboard Dinner Night is a fancier way of saying and presenting “Clean Out the Fridge” Night! I find leftovers from the week, including cold cuts like salami or turkey we’ve used for lunch/sandwiches, and lay everything out on a wooden board.

I make sure there’s at least some protein – usually leftover meat like roast chicken (above) and/or cold cuts and some cheese – some vegetables, some fruit, some olives or pickles, and some bread. I get out some condiments – spicy mustard, ranch dressing, etc. – and let everyone fix their own plate.

It has become everyone’s favorite meal. Easy + uses up leftovers + yummy = my kind of dinner!
